Deviled Eggs

Hard eggs are slick and easy to swallow, requiring very little chewing and lubrication; making them very appropriate for the mouth changes associated with radiation therapy, in particular dry mouth.

Ingredients

For 2 Serving(s)

  • 1 dozen Eggs
  • 1 tbsp Onion minced
  • 1 tbsp Sour pickle, minced
  • 1 tsp White pepper
  • 1/4 cup Mayonnaise
  • Salt to taste
  • Tabasco pepper to taste
Deviled Eggs Directions
  • Could substitute ginger for pickle Could substitute sour cream for mayonnaise
  • Take the eggs at room temperature and gently lower them in to a pot of boiling water.
  • Boil gently for 12 to 15 minutes.
  • Drain and place in cold water until cold, then peel.
  • Cut lengthwise by the middle and separate out the yolk.
  • Mash and mixed the yolk and mayonnaise, pepper, salt, onions and pickle.
  • Replace the mixture into the empty white. Garnish with flavoring and colorful topping. (Olives, capers, roasted peppers)
