Garlic Foam with Avocado

The relative new technique of foaming, allows for the production of multiple flavors. The texture is wasy for people to dissolve, distribute and swallow. It's typically served cold and mixed with complementary or contrasting flavors, while avoiding excessive stimulation of smell.

Ingredients

For 2 Serving(s)

  • 1 head Fresh garlic, clean and finely chopped
  • 2 cups Heavy whipping cream
  • to taste Sugar
  • 1 each Fresh avocado, skinned and sliced lengthwise

Steps

  • In a medium sauce pan, place the garlic, sugar and cream over low/medium heat until gently scolded. Allow to cool and pass through a strainer. Discard the garlic meat.
  • Place in the refrigerator for at least 2 hours.
  • Using a hand mixer on high, beat the mixture until foamy.
  • Use a large crystal glass and fill 1/3 full with the whipped cream.
  • Place a slice of avocado diagonally and finish loading the glass with whipped cream.
  • Garnish with fresh, green herbs.
