Cold Beet Soup with Jalapeno Pepper Ice Cream

This recipe emphasizes the gastrointestinal difficulties related to chemotherapy and use of antibiotics during infection. Loss of taste and some hypersensitivity makes eating difficult.
Ingredients

For the beet soup
- 2 Large beets, cleaned
- 1 tablespoon Olive oil
- to taste Salt
- to taste Pepper
- 2 cups Beef broth
For the jalapeno pepper ice cream
- 4 Jalapeno pepper, fresh and clean (Cut length wise, seeds added)
- 1 tablespoon Clarified butter
- 1 quart Heavy cream

Steps For the beet soup
- Preheat the oven to 350ºF. Place the beets, olive oil and salt/pepper in a well-sealed aluminum foil pocket and bake for 1 hour. Allow to cool in the refrigerator.
- Peel the skin with the help of a paper towel. Cut the beets into small cubes and chop in the food processor. Add the beef stock and blend to a heavy sauce consistency. Add salt and pepper to taste.
- Place in the refrigerator until ready to serve.
Steps For the beet soup
- In a deep 2 qt. pan over medium heat, blanch the pepper in the butter until aroma is present.
- Add the heavy cream and using low heat and occasional stirring, allow the mixture to come to a boil. Place in the refrigerator and allow to cool overnight.
- Place the mixture in an ice cream maker until well-aired and fluffy.
- Place in the freezer until ready to serve.
For Serving
- In a soup bowl, place a shallow amount of the beet soup.
- In the center, add a scoop of the jalapeno ice cream.
- Garnish with marinated jalapeno slices.

The peppers in the recipe have the ability to depolarize those receptors to improve tastewhile the beets provide easy and readily usable carbohydrates without overt sugar taste while also giving necessary fiber for large bowel function.
Note: Beets will discolor bowel movements and urine to a reddish color not to be confused with blood.
